Pipis in XO Sauce

Serves 4*

Ingredients -

30 Live Pipis (Purged)

3tbsp XO Sauce

3tbsp Soy Sauce

2tbsp Sesame oil

Fresh Spring onions - Thinly Sliced

Fresh coriander - Thinly Chopped

1 lime

Sesame seeds

1/2 a beer 

Method -

  1. Bring a pot to a high heat and add in the pipis, folloed by a good splash of beer. Quickly put the lid on the pit and let it steam for 5 minutes or until the pipis are 90% open.

  2. While youre cooking, mix the XO, Soy and Sesame oil in a bowl and have it ready for when the pipis are cooked.

  3. Once the pipis are open, tip out any residual liquid from in the bottom of the pot and then incorporate the sauce. Toss the pipis until they’re fully coated in the sauce.

  4. Garnish with coriander, spring onion, sesame seeds and fresh lime.

    Best enjoyed alongside an icy cold beverage.
