Tandoori Fish Wings



Tandoori Fish Wings
Serves 4 | Prep time – 10 Minutes | Cure time - 5 mins
Ingredients
4 Fish Wings
1/2 cup yoghurt
1/4 cup tandoori spice
1 lime
8 Cherry tomatoes - finely diced
1/2 Lebanese cucumber - finely diced
1/4 red onion - finely diced
Coconut cream
Coriander
Olive oil, Salt & pepper
Method
The Fish Wings
1. Marinate the fish wings in the yoghurt & tandoori spices for 30 minutes.
2. Dress with olive oil, salt & pepper and place over a coal grill. Give the wings a good amount of heat and char. Cook for 5 or so minutes on each side depending on the thickness of your fish wings.
Once cooked, let rest for a few minutes then serve.
Dress with a few spoonfuls of coconut cream & pair with the fresh kachumber.
The Kachumber
1. Combine the finely diced tomatoes, red onion & cucumber. Dress with olive oil and a sprinkle of salt.
