Tiger Prawn Tacos

Serves 4 | Prep time – 10 Minutes | Cook time 5 mins

Ingredients

Tacos

  • 8 Large Tiger Prawns

  • 1 cup ripe pineapple - Finely diced

  • 1/3 cup cherry tomatoes - Finely diced

  • 1/2 Red onion - Finely diced

  • Kewpie Mayo

  • Lime

  • Spring onions: Finely chopped

    Green Sauce:

  • 1/2 bunch parsley

  • 1/2 bunch coriander

  • 1/2 bunch mint

  • 1 Green Chilli - topped and seeded if desired

  • 3 cloves garlic

  • 2tbsp tahini

  • 1tbsp honey

  • juice of 1 lemon

  • 2 spring onions

  • 3tbsp Olive oil, Salt & Pepper

    Method

The Prawns

1. Peel your prawns and remove the poo-tube

2. Season with olive oil, salt & pepper

3. Cook on a high heat over a grill for a couple of minutes each side until the prawns are nicely caramelised but not overcooked.

The Holy Green Sauce

1. Place all ingredients into a nutribullet/blender and combine until thick and saucy. Adjust seasoning with additional salt, honey and lemon until perfect and dilute with water if necessary to create a saucier blend. Refrigerate until required.

The Taco

1. For the salsa, combine the tomato, onion, spring onion, coriander & pineapple in a bowl and set aside until required

2. Lightly toast the tacos over the grill

3. Once the prawns are cooked, serve the tacos immediately. Garnish with a generous few spoonfuls of green sauce, extra spring onions & coriander.

Best enjoyed with a cold beer & by the ocean!
