Venison Big Mac



Venison Big Mac
Serves 4 | Prep time – 20 Minutes | Cook time – 15 Minutes
Ingredients
Venison Patties
1kg Venison Mince
1/2 white onion - very finely diced
Olive Oil
2 tbsp BBQ Seasoning (I use Lanes Magic Dust)
Salt & pepper
Cheap fake cheese singles
Big Mac Sauce
1/2 cup kewpie
1 clove garlic – minced
1/2 white onion - very finely diced
1/4 cup pickles - finely diced
1tsp yellow mustard
Capers - Finely diced
Parsley
Dill
Lemon Juice
1tsp smoked paprika
1tsp onion powder
Burgers
4 Brioche burger buns
Tomatoes - sliced
Iceberg Lettuce (has to be iceberg)
White onion - Thinly sliced
Butter
Method
The Patties:
1. Combine the mince with the onion, seasoning powder and a good glug of olive oil. Season with salt and pepper then mix thoroughly.
*Theres a general rule when it comes to making burger patties (and rissoles in general) - the more you mix the mince, the more dense and “sausage” like the mix will become. The less you mix, the more crumbly it will be. You want somewhere in between so that your pattie holds its shape, but not so much that it becomes like spam.
2. Shape your patties and set aside on a sheet of baking paper until ready to be grilled.
3. Dress with olive oil and grill to perfection. Right at the end, top your pattie with your cheese singles and keep warm.
The Dressing:
To make the Big Mac sauce, combine all of the ingredients…
* Hot Tip - Make this sauce in the days prior - the flavour of everything will release into the mayo and it will be extra tasty.
The Burger:
Butter and grill your burger buns, then it’s as simple as constructing. From bottom to top - Spoonful of Big mac sauce - Lettuce - Tomato - Pattie - Fresh onion - Big Mac Sauce (on the lid of the bun).
