Goat Sate Skewers
Balinese style Goat Sate Skewers

Ingredients
Skewers
• 600g Goat meat
• 1 knob Ginger - grated
• 2 cloves garlic - grated
• 2tbsp ketchup manis
• 2tbsp balinese spice marinade
• 2tbsp finely chopped lemongrass
• Olive Oil
• Skewers
Sambal Matah
• 1 kaffir lime leaf
• 3cm Fresh lemongrass
• 1 red chilli
• 1 whole shallot
• 1 clove garlic
• 1tbsp Coconut oil
• Squeeze of lime
• 1tsp fish sauce
To serve
• Fried Shallots
• Crushed Peanuts
• Fresh Lime
• Sticky Rice - (Optional)
• Spicy Sambal - (Optional)
Method
Step 1: Prepare the skewers
• Soak the bamboo skewers in water to help prevent them from burning
• Cube the goat into skewer sized pieces then combine with the remaining ingredients –
marinade for at least half an hour but up to overnight if desired
• Feed the marinated goat onto the skewers then season with salt and olive oil
• Grill over hot coals until caramelised and cooked through – Once cooked, rest for five
minutesStep 2: Sambal Matah
• Finely slice all of the ingredients then combine with the limejuice , coconut oil and fish
sauce. Set aside until ready to serve
Step 3: Plate and Serve
• Enjoy the sate goat skewers with the fresh sambal matah, crushed peanuts, fried shallots and any other accompaniments such as a fresh papaya salad or a steaming basket of sticky rice.
